Ingredients
For the Vinaigrette:

- hand full of chopped fresh basil
- (fresh) oregano, dill and thyme to taste (1tbsp each)
- Pinch of red pepper flakes (optional)
- Sea salt and black pepper, to taste
For the Salad:
- Salad as a bed to put the rest on
- 1 ½-2 cups cherry tomatoes, halved
- 2-3 peaches, sliced into wedges
- 1 cup pitted fresh cherries or figs
- 2 burrata cheeses, at room temperature
- ¼ cup toasted pumpkin seeds (or other nuts/seeds)
Instructions
- To make the vinaigrette: Combine all vinaigrette ingredients in a glass jar or small bowl and whisk until smooth. Taste and adjust the chili flakes, salt, and pepper to your preference.
- Grill the peaches so they are soft and warm.
- Add the salad base on a big plate and add the toppings: the cherry tomatoes, cherries/figs, the warm peach wedges.
- Break the balls of burrata by hand and arrange them around the salad. Drizzle the vinaigrette and top with the toasted pumpkin seeds and additional fresh herbs if desired.
- Serve and enjoy immediately.
